Straight To the Pint: Libby's Gluten-Free Waffles


Hey, it’s Libby here! Happy Week 1 of Veganuary!!! I could not be more excited to begin this plant-based AND gluten-free eating journey with you. Without further ado, I present to you this week’s recipe:

Growing up, waffles were my favorite breakfast food! When I found out I had to eat gluten-free I was especially sad to let them go. Throughout the years, I’ve come up with what I think is a pretty kick-ass gluten-free waffle recipe! They are vegan, gluten-free, and absolutely delicious: a crunch on the outside and chewy on the inside. In fact, this is the same recipe we use for the waffles that we make at our storefront!


When I'm feeling lazy, I just do peanut butter and syrup on my waffles. Does any one else eat their waffles like this or am I crazy? 🤷‍♀️

Here’s what you’re gonna need!


Ingredients:

1 ½ cups almond milk

2 teaspoons lemon juice

1 ½ teaspoon vanilla extract

2 cups gluten-free flour (we use Bob's Red Mill Gluten-Free Flour, but use whatever you have or prefer)

1 tablespoon baking powder

¼ teaspoon sea salt

4 tablespoons brown sugar


And last but not least, a waffle iron!


Directions:

Makes about 3-5 waffles

  • Plug in and preheat your waffle iron

  • In a small bowl, combine wet ingredients: almond milk, lemon juice, and vanilla extract. Let this it for a few minutes

  • In a larger bowl, combine dry ingredients: GF flour, baking powder, sea salt, and brown sugar

  • Add butter to the wet ingredients. Mix, and pour into the dry ingredients. Mix this until just combined.

  • With a ½ measuring cup, pour the batter into a hot and greased waffle iron

  • Cook for 5-8 minutes, or until golden brown (we like our waffles on the toastier side, so we usually cook them for 7 minutes)

  • Serve these waffles for breakfast (top with fruit and nuts, for some protein), or for dessert, topped with a double scoop of Kula. I am truly obsessed with our Strawberry Short Cookie (New January Flavor!) melting into all of the golden nooks and crannies of a hot waffle!
