Straight To the Pint: EASY GF WRAPS



It’s Libby here again for week 2 of Veganuary! It has been absolutely amazing to look through the waffle recipes you sent in this past week! I’m constantly in awe of your creativity!


This week, we’re making wraps!

Personally, I love any kind of self-contained meal! Any sandwich / burrito / gyro menu item where I can eat the food itself and the vessel that it arrives in, is a win for me. Since I can’t eat gluten, a lot of wrap-materials are off limits. But there are so many great gluten-free wraps and tortillas around, nowadays. It can take some searching though. I personally like BFree High Protein Wraps or Siete's Grain-Free Almond Flour Tortillas (both are available at your local Bristol Farms!)


And before anyone starts complaining, this isn’t a basic bitch wrap. This is a thoughtfully prepared, delicious yet simple, texture-filled, vegan + gluten-free wrap. She’s QUEEN of wraps, and gets bonus points for the yummy texture from the crunchy veggies and the protein from the chickpeas!

Here’s what you’re gonna need!


Ingredients:
  • 1 tortilla (make sure they are gluten-free!)

  • ½ a cucumber

  • 1 bell pepper

  • A handful of greens (we’re using arugula today, but use whatever you have on hand)

  • 1 can of chickpeas

  • Salt + pepper + whatever other spices you like

  • Optional: your favorite vegan mozzarella cheese (I love Miyoko’s!) and roughly 2 tablespoons of your favorite dip (Bitchin’ Sauce is what we’re using today, but humus or another kind of spread is great!)


Obviously, depending how hungry you are, feel free to double (or triple) this recipe! And sub out the listed ingredients for whatever you have in your pantry! This is a great way to eat your veggies that are going bad soon!


Directions:
  • Warm up your tortilla (either via frying pan on low heat or in the microwave on a plate)

  • While the tortilla is warming up, chop bell pepper and cucumber lengthwise into ½ inch slices. In a bowl, mash your chickpeas using a fork, and season to taste.

  • Remove tortilla from heat

  • Optional: spread your chosen dip on the tortilla

  • Then spread your mashed chickpeas on the tortilla

  • Layer on the bell pepper, cucumber, and arugula

  • Optional: top with vegan mozzarella cheese

  • Roll up wrap and enjoy
